Bolivian Salad (Bolivianischer Salat)

A cold salad that can be paired with just about anything, but especially good with pork and chicken dishes.  Also exceptional with a red wine of your choosing.

Ingredients

  • 1 1/2 cups of cooked potatoes (diced)
  • 3 eggs, hard cooked and chopped
  • 1 1/2 tablespoons of chopped red peppers
  • 1/2 tablespoon of chopped chives
  • creamy dressing
  • lettuce leaves

Be sure to cool the potatoes in the refrigerator first.  Next, simply mix the cold potatoes with the hard cooked eggs, red peppers and chives.  Pour dressing over this mixture and serve over a nest of lettuce.  This will be enough for 6 people and will be fine the next day if refrigerated.

  1. After trying this recipe, we think you could easily use up leftovers from previous nights of the week to make this salad because everything needs to be cooked before making and then the salad is chilled.
