Bavarian Bread Dumplings with bacon is an extra  special savory dumpling. The  bacon or ham with onions turns an ordinary dumpling into an extraordinary dumpling.  This Bavarian Bread Dumpling recipe calls for nutmeg, as do many dumpling recipes, but I find the bacon or ham and onions are great with out the nutmeg as well.  Sometimes, nutmeg is added to any recipe with greens because it enhances the flavor.

Bavarian Bread Dumplings (Bayerische  Semmelklosse)


  • 10 white rolls
  • 1-2 cups milk
  • 1/2 cup bacon or ham
  • 1 tbsp. butter
  • 1 small onion, chopped
  • 1 tbsp. parsley, chopped
  • 3 eggs
  • Salt and Pepper
  • Nutmeg

Slice Rolls finely and soak in lukewarm milk. The goal is for the bread to be moist, but not soggy.

Dice your bacon or ham and fry in butter together with the chopped onion and parsley.  I usually add the parsley at the last minute.

Add the eggs and seasonings (nutmeg optional) to the bread slices and combine with fried ingredients.  Shape into dumplings.

Cook in salt water for 20 minutes.  Yields 4 servings.
